Five minutes, one probe, one glass of white

TU Darmstadt, 2024: white poured at 46°F (8°C) is 52°F (11°C) in five minutes. Part of that is the glass itself.

That is what the probe in the glass was for. You pour on the deck, open the bottle at six, and by the second glass everyone has noticed. The glass is a lost fight. The opened bottle is not.

What they measured

In 2024 a team at TU Darmstadt did the boring thing and measured it. Not a tasting note and not a guess: a measurement, 150 ml of white wine in a glass, room at 84°F (29°C).

It is not only the air. The glass had been standing out on the table, warm, until you poured cold wine into it. Now it hands that warmth to the wine. The low sun on the table adds to it — which is why moving to the shady side of the table is not the whole fix either.

That is the whole problem, measured. And here is the part nobody says out loud: you cannot fix it. A glass is 150 ml with a hand wrapped around it. There is no version of that glass that stays where you poured it.

The clock you can hold

Look at the bottle instead.

Early fall. Back deck, the last of the low light, the sweater already on the chair. The bottle came out of the fridge cold. Then you opened it. From that moment it started giving the cold back — standing on the table in the low sun, with four more glasses still inside it. Every one of those glasses will be poured at whatever temperature that bottle has drifted to by then.

That is a fight worth having. Unlike the glass, the bottle is big, it is stationary, and it is not in anybody's hand.

Most wine poured at home is served too warm for the whites and too cold for the reds.

The room is one end of that. A home fridge at 37–41°F (3–5°C) is the other.

Neither end is where wine wants to be. WSET is more specific: below 43°F (6°C) the flavors of white, rosé and sparkling are masked. Aromatic whites want 46–54°F (8–12°C).

So the target is not cold. The target is held. Held for the ninety minutes or so that an opened bottle stands on the deck table.

Why not just ice

Ice is the obvious answer. Do the arithmetic on it anyway. The arithmetic is exactly why we do not compete with ice.

Melting ice absorbs 333.5 joules per gram — that is a phase change, not a chemical reaction. Frozen 304 stainless carries about 14. On raw cooling power ice wins and it is not close, and anyone telling you otherwise is selling you something.

Here is what that dilution costs, in grams.

Honest band: 11–15% water. That is ice's hard job, cooling a glass down. Holding an already-cold glass costs ice less. Either way, it is the price of the only method most people have.

The bucket is not free either. WSET's own instruction is three-quarters full, equal parts ice and water, because air acts as an insulator and a bottle sitting in ice alone will chill very slowly. That is a bucket, a bag of ice and a wet bottle on your table.

There is a way to hold a cold bottle that adds nothing to it. Its dilution number is zero. Zero grams of water, zero percentage points of strength, across the whole bottle.

That is the trade in one line: we give up the speed argument, and we keep every gram of the wine.

What goes into the bottle

A rod of 304 food-grade stainless steel, chrome finished, lives in your freezer. Not sometimes. Permanently. It is the thing in the freezer door you never have to plan around.

The moment the bottle is opened — while it is still fridge-cold, not after the first round, not later — the rod goes in. It sits inside the bottle, in the wine, visible through the glass, and it holds the cold from the inside.

It is not solid. A pour channel runs the length of it, so you pour through it rather than around it. On top sits a clear acrylic pour spout, and it is the spout that aerates — the steel never does. A stopper is included for whatever is left.

Nothing is added to the wine. No water, no melt, no 11–15 percent of something that used to be ice.

The questions

The obvious questions, in the order they come up

“Your number was about a glass. You just admitted that.”
Correct, and it stays that way. Darmstadt measured a 150 ml glass. There is no peer-reviewed figure for a bottle, and we are not going to invent one. The glass measurement is precisely the reason to stop trying to rescue the glass and start looking after the bottle.

“So it won't rescue a bottle I left standing out?”
No. It will not, and we will not say it will. A competitor's one-star review reads: “It DOES NOT chill down a warm bottle.” That is the category's fatal claim and it is not ours. This goes into a cold bottle at the moment it is opened, to keep it that way. If a bottle has already been standing out, the fridge is the tool for that, not this.

“Won’t a piece of metal warm up right away?”
It is not doing ice's job and it does not claim ice's numbers. It is a thermal mass sitting in the middle of the liquid, inside the bottle, working against the drift while the bottle stands open on the table. And because it lives in the freezer, it is always at full charge. Put in at opening, it holds a bottle on the deck table for around ninety minutes. We do not claim more than that.

“Will it fit my bottles?”
99% of bottles, screw-caps included. Never all of them — there are odd bottles out there and we would rather say so.

“Does it change the taste?”
It is 304 food-grade steel, the grade made for food contact, and nothing melts off it. The one thing that does change the wine is the clear acrylic pour spout on top, which aerates as you pour through it.
